how do you fit a tachometer (rev counter) to a peugeot 406 coupe 3.0 V6?

Q: I know the easy bits just need to locate the coil or some ECU wire

A: I have never been to an auto parts and accessory shop in the UK. But in America, there are places that sell all sorts of guages and meters to "add on" to your car. Aftermarket guages. I had my choice of 5 different temperature guages when I wanted one. Could you talk to a salesman there, in the UK, and buy one with complete directions? I recommend staying away from the ECU. That is a very expensive thing to mess with. Try adding your tachometer to a spark plug wire, or the coil as you stated. More complicated ones (and cruise controls) have spinning magnets on the flywheel that register the revolutions. I am currently putting the temperature sensor and dashboard guage from a 306, onto a 205. They have the same water neck with thermostat.
